Meet our Butchers
At Moor Farm we have 6 talented butchers coming from a range of backgrounds. Each of them brings something great to our team and this week we are celebrating their skills!
Paul Webster, Master Butcher
Paul is a 3rd generation butcher who started learning butchery from his father at a young age, and later went on to train at George Adams in Spalding.
Following this, Paul headed to London to work at Dewhurst Butchers. This is where he learnt how to put on a top class window display – a talent he still has today!
Once fully trained, Paul returned home to run his family butchers shop in Baston – Webster’s Butchers. Paul later joined us at Moor Farm Shop in 2012 when we had a small butchers shop located at the farm. He is our longest standing butcher and is now passing on his skills to younger members of the Moor Farm team!
Many of you will have met Paul and heard the story of our fantastic Kitty B’s sausage – a secret recipe created by Paul’s grandma!
Introducing you to the lovely Lottie!
Lottie started working at Moor Farm Shop in April 2021 and began her butchery apprenticeship in October 2021 at age 16. She is always keen to learn new skills and is excelling in both her practical and theory work so far!
With help from our team, Lottie is learning more and more about butchery each day and being shown different methods of butchery to find what suits her best. She takes pride in the work she completes and has a keen eye for detail which shines through in the meat displays she creates and the products that she makes.
Lottie’s beautiful handwriting and artwork can be seen around the shop too! She is kind, hardworking and a good team player. We are proud to have her as part of our team and look forward to what the future holds for her.
Make sure to say hello to Lottie on your next visit to Moor Farm!
Nathan Goodliffe
Nathan recently completed his butchery apprenticeship with MEAT Ipswich and has been working at Moor Farm since June 2021.
He is young, kind, conscientious and a valued member of our team.
Nathan is continuing to learn new skills from our experienced butchers while bringing fresh ideas to the butchery counter.
Not only this but he is also assisting our very own butchery apprentice who we will introduce later in the week!
Scott Barratt
Scott is the newest member of our butchery team.
He is a self -taught butcher after starting his cheffing career at age 16 and working across the country in various restaurants Including one with a Michelin Star!
He has brought lots of fresh ideas to our butchery and is continuing to pick up new skills from our more senior butchers Fred and Paul whilst also passing on his knowledge to our apprentice butcher Lottie!
Scott is learning more about carcass classification and now knows a good piece rump!
Fred Sandall
Fred, pictured with his granddaughter Ruby, is a talented third generation butcher who began learning butchery at age 12 from his father and fellow butchers. He has worked for us part time at Moor Farm Shop for 10 years after first visiting for a Rotary Club Farm tour and BBQ. You may not see much of Fred, but we assure you he works hard behind the scenes on a Monday preparing the butchery for the week ahead!
In his day, Fred ran 5 butchery shops located around Lincolnshire until he retired in 2009. After 60 years, he still loves butchery and tells us he is never too old to learn something new! He is also very keen to pass on his fantastic knowledge to our younger generation of butchers and is continually thinking of new ideas for the shop! Additionally, he has helped teaching children the art of sausage making at the annual Open Farm Sunday event at Park Farm, Thorney.
We are lucky to have Fred work for us and hope that he continues to pass on his talent for years to come!
Moor Farm Apprentice Programme
Our butcher, Nathan and apprentice butcher Lottie have been talking to BBC news about their experience in the industry.
We are proud to have them both working for us and it is great to see such enthusiasm from them. We hope that our butchers Paul and Fred can also pass on their skills, as between them they have over 90 years of experience in butchery!
